Cauliflower Fried Rice Recipe
I made cauliflower fried rice as a substitute for eating white rice and it came out amazing! I made it the same way I make Nigerian Fried Rice so it’s easy, you just have to substitute cauliflower and add some quinoa for texture.
Ingredients
Frozen or Fresh Cauliflower
Mixed Veggies (Corn, carrots, and peas)
Chopped Onions
1 Habanero Peppers
Cooked, Chopped Chicken
Cooked Quinoa
Seasoning
1 Maggi Cubes
1 Knorr Cubes
Jamaican Curry Powder
Salt
Thime or Oregano
Parsley Flakes
Bay Leaves
Garlic Powder (optional)
Red Hot Pepper or Cayenne
Method
Step 1
Start off cooking by adding oil to your pot and let it get warm. After about a minute, add chopped onions and let it simmer. Once the onions are simmering, pour in the cauliflower, the mixed veggies and chopped habanero peppers. Add chopped Let them defrost and fry for about 15 minutes.
Step 2
After your veggies have defrosted, add the cooked quinoa, the chicken and the seasoning. Stir together and let it simmer for 10 minutes so the seasoning get into the cauliflower/quinoa mix.
Step 3
The last step is to taste for flavor. Once the veggies/quinoa taste seasoned and is warm. Then plate the food and enjoy!
